Chicken Malai Curry

Ingredients

  • Ghee- 30 g
  • onion, chopped – 1
  • Garlic, crushed – 4 cloves
  • Chicken pieces – 1 1/2 kg
  • Thin coconut milk -2 1/2 cups (625ml)
  • Fresh lemon juice – 2 tblsp.

Curry mixture

  • Ground coriander – 1 tblsp.
  • Ground mustard – 1 tsp.
  • Ground cumin – 1 tsp.
  • Ground turmeric – 1 tsp.
  • Ground ginger -1/2 tsp.
  • Chilli powder – 1/2 tsp.

Method

  1. Melt ghee in a frying pan. Saute onion and garlic until onion is tender.
  2. Combine all curry mixture ingredients.
  3. Add coconut milk and lemon juice. Simmer, uncovered, for about 45 minutes or until the sauce begins to thicken and the chicken is tender.
