Vegetable Biryani


  • Rice -2 cups
  • Mint chutney- 2 tbsp.
  • Tomato paste- 1 tbsp.
  • Onion- 1
  • Mixed vegetable, cut length wise (carrot, beans, cabbage, cauliflower)- 1 cup
  • Potato-1
  • Peas-1/2 cup
  • Cumin seeds, few bay leaves & some big cardamom-1/4 tsp.
  • Oil -1 tbsp.
  • Garam masala/biryani masala-1 tsp.
  • Turmeric powder-1/2 tsp.
  • Water- 1/4 cup
  • Salt to taste


  1. Cook the required amount of rice or use any leftover rice, which is long grained.
  2. In a pan take some oil and add cumin seeds, bay leaves and cardamom.
  3. Now add finely chopped onions & fry.
  4. Put the mint chutney and tomato paste, also add all the vegetables including potatoes and peas.
  5. Add the amount of water mentioned and let it cook at low flame.
  6. Finally, add the cooked rice and salt & mix well.
  7. Garnish it with little mint & coriander leaves.
  8. Serve hot with any kind of raita or dal.
