Ingredients
- Rice -2 cups
- Mint chutney- 2 tbsp.
- Tomato paste- 1 tbsp.
- Onion- 1
- Mixed vegetable, cut length wise (carrot, beans, cabbage, cauliflower)- 1 cup
- Potato-1
- Peas-1/2 cup
- Cumin seeds, few bay leaves & some big cardamom-1/4 tsp.
- Oil -1 tbsp.
- Garam masala/biryani masala-1 tsp.
- Turmeric powder-1/2 tsp.
- Water- 1/4 cup
- Salt to taste
Method
- Cook the required amount of rice or use any leftover rice, which is long grained.
- In a pan take some oil and add cumin seeds, bay leaves and cardamom.
- Now add finely chopped onions & fry.
- Put the mint chutney and tomato paste, also add all the vegetables including potatoes and peas.
- Add the amount of water mentioned and let it cook at low flame.
- Finally, add the cooked rice and salt & mix well.
- Garnish it with little mint & coriander leaves.
- Serve hot with any kind of raita or dal.
