General properties (chemical characterstics) of fat soluble vitamins – A,D,E, and K

  • Are not easily destroyed by the ordinary cooking methods
  • Are stored in the body (although an excess intake can lead to toxicity and is a called hypervitaminosis)
  • They are destroyed by rancidity and are always associated with fats.
  • Are not absorbed if mineral oil is present in the intestine
