Goitrogens
Substances known to interfere with the activity of thyroxine to produce goitre in spite of a normal intake of iodine are known as goitrogens.
Goitrogens generally thio-cyanates are found in
- cabbage,turnips, rutabas, cauliflower, brussel sprouts, peanuts and mustard
Goitrogen in these foods are inactivated by cooking that involves high temperature.
